Curried Split Pea Soup

Ingredients
1 tbs olive oil1 onion chopped4 cloves garlic sliced1 qt vegetable broth1 qt water1 tsp curry powder1 tsp ground cumin1/2 bunch parsley chopped
Directions
Heat oil in a large saucepan over medium-high.
Add onion; cook 5 minutes, stirring occasionally.;
Add carrot and garlic; cook until softened, about 5 minutes.
Add remaining ingredients except parsley; bring to a boil
Reduce heat; simmer uncovered 30 minutes, or until the peas are tender.
Ladle into shallow bowls; garnish with parsley.
