Mini Meatloaf

Ingredients
3 lbs 93% lean ground beef1 McCormick meatloaf Seasoning1 Can of Italian diced tomatoes1 tbsp Adobo Light 2 eggs 1/2 cup soy milk1/2 cup oatmeal
Directions
Lightly beat eggs first. Then add everything to to bowl. Mix in large bowl until well blended. Put equal amounts in muffin pan. Bake at 375 for 30-40 minutes. Once done may top with ketchup, tomato sauce, or salsa.

Makes 12 meatloaf muffins.
