Ground Beef 93% Lean, 16 oz Old El Paso 8" Flour Tortilla, 12 tortilla(s)Mushrooms, fresh, 8 oz Onions, raw, 1 cup, chopped Great Value Petite Diced Tomatoes (1/2 cup), 3.5 servingEnchilada Sauce, Old El Paso, Mild, 4 cansMozzarella Cheese, part skim milk, 5 ozCheddar Cheese, 9 oz
Brown beef. Add mushrooms, onions, diced tomatoes, and two cans of enchilada sauce. Cook until reduced (a thick sauce instead of a runny sauce).
Fill tortillas with 1/4 c mixture, 1/4 oz mozzarella, and 1/4 oz cheddar. Place in oven-safe baking container. Cover with remaining two cans of enchilada sauce. Cover that with 2 oz mozzarella cheese and 6 oz cheddar cheese. Place in 375 degree oven and bake for about 15 minutes, or until top is just starting to look "toasted."
