Spaghetti Squash & Meat Sauce

Ingredients
1 Large Spaghetti Squash1 Green Bell Pepper Diced1 Medium Yellow Onion Diced1 Roasted Red Pepper Diced1 Cup of Mushrooms Sliced3 Cloves of Garlic Minced1 tsp of Canola Oil1 Pound Ground Turkey1/4 cup of Reduced Fat Feta Cheese1 Cup of Reduced Fat (2%) Mozzarella Cheese1 Jar of Spaghetti (Tomato) Sauce1 Bunch of Cilantro Chopped, reserve 1 Tbsp for garnishSaltPepperItalian Seasonings
Directions
~Preheat oven to 400 degrees
~Slice spaghetti squash in half, lengthwise and remove seeds
~Spray inside with oil spray and sprinkle with salt and pepper
~Place cut-side down on greased cooking sheet
~Roast in oven for 1 hour
~Take out of oven, test for fork tenderness on outside, turn over and allow to cool
~While cooling, take a large pan and place oil over medium-high heat
~Saute' onion, peppers, garlic, mushrooms and Italian seasonings until tender
~Add ground turkey and stir frequently until evenly browned
~Add jar of tomato sauce and bring to simmer
~Take a fork and shred the squash (it will naturally shred into spaghetti strands with very little effort), add to the sauce and mix
~Add the Feta cheese and cilantro and toss together
~Spoon out the mixture onto a plate, sprinkle with 1/4 cup of mozzarella cheese for each serving and garnish with cilantro

**Recipe makes 4 servings, approximately 2 1/4 cup each**
