Seafood Fra Diavolo

1 1/2 T extra virgin olive oil, divided1 lb seafood (I used frozen kind and defrosted)1/4 t sea saltfreshly ground black pepper, to taste1 red bell pepper, thinly sliced1 red onion, halvedlengthwise and thinly sliced2 cloves garlic, minced1 14.5 oz can no salt added diced tomatoes with basiland garlic1/2 t crushed red pepper (or to taste)2 T fresh parsley, chopped, for garnish
Heat 1 T of oil in large skillet over medium heat. Warm thawed seafood, season with salt and black pepper. Transfer to a bowl and set aside.
Heat remaining oil in same skillet and add red bell pepper; cook stirring frequently, for 5 minutes. Add onion and cook for 4 minutes, thn garlic for 1 minute, stirring constatntly.
Add tomatoes and crushed red pepper; stir well. Add shrimp and simmer until heated through, 1 minute. Great to serve over quinoa, rice, or pasta.
