Southwest Chicken Soup

Ingredients
1 lb. Boneless, Skinless Chicken breast cut into 1 inch pieces2 med sweet potatoes, peeled and cut into 1 inch pieces (2 cups)1 large onion chopped2 cans (14.5 oz each) dieced tomatos with green chilis, undrained1 can chicken broth1 tsp oregano leaves1/2 tsp ground cumin1 cup frozen whole kernal corn1/2 cup chopeed green bell pepper2 Tbsp chopped fresh cilantro
Directions
Mix chicken, sweet potatoes, onion, tomatos, broth, oregano, and cumin in 3 1/2 to 4 quart slow cooker (crock pot). Cover and cook on low heat 7-8 hours. Stir in corn and bell pepper and cook on high about 30 minutes or until chicken is no longer pink. Sprinkle with Cilantro. Serve and Enjoy.

    Easy to put together and the whole family enjoyed it. It finally got my toddler to eat sweet potatoes! This will definitely be added to my menu rotation.
    12 servings is probably more an appetizer or snack portion. This makes a nice hearty supper for 4 if you add a salad. - 10/15/09
