Black Beans & Smoked Sausage

Ingredients
2 cans Black Beans; rinsed/drained7 oz. Lite Smoked Sausage 1 can Canned Tomatoes (no salt)1 cup Onions, raw; chopped1 cup Green Peppers; chopped1 tsp minced Garlic1 (4oz) can chopped green chilies; drained/rinsed1 tbsp Olive Oil1 tbsp Cider Vinegar2 tsp black pepper0.25 tsp cayenne pepper
Directions
Cut sausage into slices; cut slices in half.

Cook garlic & chopped veggies in olive oil until onions are translucent. Add sausage, beans tomatoes, chilies & vinegar, and pepper. Heat through (10-15 minutes on medium heat), and serve.

    tasty dish. beware it is spicy, but i love spicy food. the only complaint is the sodium content. definitely use no/low salt alternatives whenever possible. - 7/2/09
