Basil/Pine Nut Pesto - low fat

Ingredients
1 cup fresh basil2 Tbsp roasted pine nuts3 cloves garlic1 Tbsp extra virgin olive oil3 Tbsp water2 Tbsp grated parmesan cheese1/2 tsp light salt
Directions
In food processor, process roasted pine nuts and garlic cloves to fine mince. (note: you can use sunflower seeds if you prefer) Add basil and process until finely minced. Add water, olive oil, parmesan cheese and light salt and process until well blended.

Toss with 4 oz of whole wheat pasta for a side dish for 4 people. Also great warmed and spooned on top of grilled chicken, or on a chicken or turkey sandwich. Also great for a pesto pizza.

I make several batches at once, and freeze flat in small zip lock bags. They thaw in minutes.

    Pretty good - basil and garlic are always a winner. A bit more basil never hurts and I used salt free chicken broth instead of water and skipped the salt altogether. People doctor their pasta to their liking anyway with salt and more parm. - 7/11/15
