Cabbage and Beef Stew

1 yellow onion, chopped1 lb ground beef (lean 7% fat)1 small white/green cabbage2 cubes beef or veggie bouillion1 cup water2 tbsp maple syrup1 diced tomatoketchupsalt and pepper to taste
Brown the chopped onion in a non-stick pand and transfer to a large pot. Fry meat until brown, pour off the grease to a cup, and add the meat to the pot. Chop the cabbage into pieces (about 1 inch squares). Using a little meat grease, brown small portions of the cabbage and add little by little to the pot. Drizzle in the maple syrup, add the beef bouillon, and mix. Season to taste with salt and pepper. Add rice and let simmer for 1 hour or more.
Serve and add tomatoes and a bit of ketchup on top.
Makes approximately 6 1.5-2 cup servings.
