Egg beaters veggie omelet

Ingredients
3/4 cup Egg Beaters1/4 cup chopped vegetables (I use onions, peppers, and mushrooms)Seasonings to taste (optional)Cooking spray1 Ziploc freezer bag
Directions
Spray the inside of the freezer bag and make sure it is coated thoroughly inside. Add Egg Beaters and vegetables (and seasonings if desired) and seal bag. Place in a pot of boiling water for 13 minutes. Take out the bag and open; omelet will roll out easily.

    Vegan or not, it's great. Easy to make, quick, healthy! I did lightly saute the onions, celery, garlic and pepper before adding because I like them cooked just a littl more - 3/15/10

    Wonderful Receipe! Never thought to put the omlet into a bag before. I should point out that many of my vegan cook books use dairy, eggs and milk...that was before the soy genteration occured. I guess they call us OVO vegan's now ;). A bit of chopped tomato is nice also with this combo! - 3/8/11
