Tomato Basil Couscous and Lentils

1/2 t Smart Balance1/4 cup onion, chopped1/2 cup Spicy V83/4 cup water1 bay leaf1/2 cup lentils, rinsed and picked over1/2 cup whole wheat couscous1 small tomato, chopped1/4 cup basil, chopped1 T vegetarian Parmesan cheese
Saute onions in Smart Balance for a few minutes, until tender. Add the V8, water, bay leaf, and lentils. Bring to a boil. Reduce heat and simmer 25-35 minutes, or until lentils are soft but not mushy. You may need to add some extra water if the lentils soak it all up. Turn off the heat, stir in the couscous, tomato, basil, and cheese. Let sit 5 minutes. Season with salt and pepper to taste. Fluff with a fork and serve hot.
Makes 6 servings.
Note- the ingredients finder didn't have whole wheat couscous, so the fiber and calories may be a little bit off since I just figured it using the regular stuff.
