Turkey Vegetable Meatloaf

Ingredients
Meatloaf1 cup finely chopped zucchini1/2 cup finely chopped red bell pepper1 cup finely chopped mushrooms3 cloves garlic also finely chopped1/4 tsp red pepper flakes1 1/2 tsp. thyme2 T parsleysalt and pepper to taste1 large egg1 lb. lean ground turkey1/2 cup panko bread crumbs1/4 cup grated parmesan cheese1/4 cup ketchup 1 T balsamic vinegarSauce1/4 cup ketchup1T balsamic vinegar1 pinch red pepper flakesspray oil
Directions
Preheat oven to 400 degrees F

Saute vegetables, garlic, pepper flakes, salt and pepper until almost soft, about 5 minutes. Set aside to cool.
Beat eggs and herbs in a large bowl, add meat and mix well, then add bread crumbs, cheese, ketchup, vinegar and cooled vegetables and mix thoroughly.
Place meatloaf in large loaf pan or small casserole dish that has been sprayed with oil.
Combine sauce ingredients and spread over top of meatloaf.

Bake for about 45 -60 minutes.
Let rest for ten minutes before slicing.

    I made this last night. Overall, it was good but I'm not a fax of thyme so I cut it in half but still was able to taste it. If I make it again I'll cut that herb out. - 10/22/10
