Curried Chickpeas & Beans

Ingredients
1 Clove Garlic, Minced1 TSP Ginger, Grated1/2 Cup Onion, Finely Chopped1 Can Diced Tomatoes (with the liquid)1 TBSP Curry Paste1 Can Garbanzo Beans, drained and rinsed1 Can Black Beans drained and rinsed
Directions
1. Drain and rinse the beans.
2, In a nonstick skillet brown the ginger, garlic, and onion.
3, Add the curry paste and tomatoes (in their water), stirring until well combined.
4. Toss in the beans, stir, and eat!

You could eat these warm or cold. I also like to mix in some couscous and make a dinner out of it!
