Ingredients
1 flounder fillet1/4 tablespoon butter, melted1 tablespoon dry bread crumbs1 tablespoon grated parmesan cheese
Directions
Place fish on a large baking sheet coated with cooking spray; brush with butter. Combine breadcrumbs and cheese and sprinkle over fish. Gently pat crumb pixture into fish, coat with cooking spray. Broil 6 minutes or until fish easily flakes with a fork.

    I made this and it was delicious! I did add some garlic powder, parsley, S&P to the breading mixture. My only questions are-what size fillet is this recipe for? I guessed a 4 oz., anyone know for sure? And, my fish was a little wet, any ideas on how to fix that? Either way though, awesome recipe! - 1/20/09

    Good! I skipped the butter and sprayed the fish with cooking spray instead, so the topping was probably crispier than the original, but the flavor was good! I will make again. Quick and easy! - 1/7/13

    Quick, easy & good. I think I will add a bit of black pepper into the bread crumb and parm mix next time. Also, it would be helpful to know the weight of "1 fillet" to be sure I was on par regarding the nutritional values. No worries, I just entered the ingredients individually in my tracker. - 5/12/10
