Cream Cheese Sweet Potato Bake

1 lb Sweet Potatoes (about 4 small/med)4oz 1/3 less fat Cream Cheese1 tsp Vanilla extract2 tbsp Pure Maple Syrup2 tbsp Brown Sugar1/4-1/2 tsp Ground Cinnamon (I just eyeball it)fresh ground pepper to taste
Preheat oven to 400. Cut and boil Sweet Potatoes until tender, and then mash. Add in remaining ingredients. In a 8x8 baking pan spray with cooking spray. Pour mixture into pan and spread evenly. Bake until browned about 20 mins.

I really liked this. I love sweet potatoes and cream cheese (or ricotta - yum!). I used stevia instead of brown sugar. I added a little ginger, red curry paste (I just recently discovered how good red curry paste tastes in sweet potatoes!), and oats on top. It was a little spongy. Needs more liquid. - 12/13/18
