Zesty Bugs (Black Beans) & Rice

Ingredients
1 cup DRY Brown rice 1 can Black beans (15-16oz/1-1.5 cups)2 cups Vegetable broth (could use chicken broth instead)Salsa for topping (not included in recipe nutrition info since everyone likes different amts)
Directions
Cook rice according to package directions.

When rice is done add in black beans and mix well. Top with Salsa. Can also add in other veggies to make it more interesting. We like to add in Birds Eye Steamfresh Southwest corn.

Makes 4 large portions.
