Red lentils with carrots (microwave)

Ingredients

1 1/2 cups red lentils2 1/2 cups vegetable or chicken broth (or 2.5 cups boiling water + 1 bouillon cube)1 cup chopped onions1 cup chopped carrots1 cup peas, frozenSalt and pepper to taste
Place all ingredients (except frozen peas) in large 8-cup measure. Microwave on HIGH for about 10 minutes. Add more water (or milk) if mixture is too thick. Add 1 cup frozen peas (they cook in lentils, and cool it down so you can eat immediately). Consider stirring in juice of 1 lime, 1 tsp. olive oil, chopped parsley, and garnishing with chopped almonds.
Some variations to add for more flavor/nutrients:
Optional add-ins/garnishes:
1/2 cup chopped fresh parsley (mix in at end)
Juice of 1 lime (stir in at end)
� tbsp olive oil (stir in at end)
Finely chopped almonds (garnish)
