Low Fat Zucchini Chocolate Chip Muffins

1.5 cups white flour3/4 cup granulated sugar1.5 tsp baking soda1 tsp salt1 tsp cinnamon3 eggs1.5 cups zucchini3/4 cup applesauce unsweetenedabout 1/2 cup semi sweet chocolate chips1/2 cup unsweetened cocoa powder1 tbsp vanilla extract
Mix well and then put into muffin cups, filling 2/3 full. Bake for 30 minutes. To add more fiber and make even healthier, use whole wheat flour, throw some flax seed in, use turbinado sugar, and add more zucchini and less chocolate chips. I think this recipe could be tweaked many different ways to your liking. Also, the salt is unnecessary. Next time I will leave it out.
