Jen's Barbecue Shrimp Stir Fry

8 oz cooked shrimp, peeled and without tails4 cups cooked white rice (I prefer Minute Rice)1 cup Barbecue Sauce (I use Sweet Baby Ray's honey Barbecue Sauce)1/4 cup water4 TB light margarine1/2 cup chopped green bell pepper1/2 cup chopped celery1/4 cup chopped yellow onion12 grape tomatoes, sliced2 TB Brown sugar, unpacked
Makes 4 1- cup servings
1) Melt margarine in a medium size frying pan and saute celery for about 3 minutes. Add the onion and pepper. Cook for an additional 3-5 minutes.
2) Add water, barbecue sauce, and brown sugar. Heat until slightly bubbly.
3) Add tomatoes and shrimp. Cook for about 1 minute or just long enough to warm shrimp and tomatoes.
4) Remove from heat and let stand 5 minutes.
5) Spoon 1/4 of shrimp mixture over 1 cup of cooked white rice.
