Chicken Chop Suey (No Rice)

1 LB. boneless skinless chicken breast, cubed1 SMALL onion2 garlic cloves, pressed1 LARGE can chop suey vegetables, rinsed1 LARGE can water1 TBLS. black bean garlic sauce1 CUP celery, chopped1 4 OZ can mushrooms1 15 OZ can baby corn.25 CUP cornstarch to thicken
Makes 4 - 6 servings.
- Combine chicken, onion, and garlic in a large pot, stirring until chicken is cooked.
- Add chop suey vegetables and 1 can water.
- Simmer for abour 1 hour.
- Stir in black bean garlic sauce along with the celery, mushrooms, and baby corn.
- Blend cornstarch with 1/4 cup cold water.
- Cook, stirring until thickened.
- Serve over rice.
