Filet of sole stuffed with spinach & feta

1 med. onion, chopped1 tbsp. butter1 tbsp. olive oil4 pieces fresh filet of sole1 pkg. frozen chopped spinach, thawed and all liquid squeezed out thoroughly1/2 - 3/4 bar Feta cheeseSeasoned bread crumbs1 lemonButter
1. Saute chopped onion in small frying pan with the butter and olive oil until translucent. Transfer sauteed onions to a mixing bowl; add Feta cheese and spinach.
2. Preheat oven to 350 degrees. Cover a large plate (a dinner plate is fine) with a layer of bread crumbs. Rinse fish and lay in crumbs. Place one quarter of spinach mixture on filet closer to one end. Roll up fish starting with side where mixture is closest. Place in baking dish. Continue until all four filets are stuffed.
3. Cook for 15 - 20 minutes.

I read the reviews. I also had small fillets so sandwiched the pieces together. Delicious.
Update: I made it again this evening fo my brother in law. He loved it. I layered the fish in a small greased pottery dish, the filling went on top and then the last layer of fish. Gluten free bread crumbs. - 10/15/13
