Roasted Sweet Potato Salad

Ingredients
4 medium sweet potatoes or yams1 large red onion.5 C extra virgin olive oil2 Tbs jalapeno2 limes2 cups cooked black beans1red pepper1 cup chopped cilantro
Directions
Makes 8 - 1/2 cup servings

Heat oven to 400
Peel and chop yams and onions and drizzle with 2 T olive oil
Roast, turning occasionally - about 30 - 40 minutes
Put jalapeno in blender with lime juice and remaining olive oil. Process
Put roasted vegetables in bowl and toss with dressing and cilantro
