Crock Pot Steak with Tuscan Tomato Sauce

Ingredients
Directions
1 pound beef round steak, cut into four servings1 medium onion, sliced1 can diced tomatoes with basil, oregano, and garlic1 tablespoon dried thyme1 tablespoon cornstarch
1. Slice onion and place in bottom of 4 qt crock pot sprayed with nonstick spray.
2. Sprinkle onion with thyme and salt and pepper to your taste.
3. Meanwhile, in a hot skillet sprayed well with nonstick spray, brown the round steak. Lots of people skip this step, but I think it gives the meat more flavor and helps it to stay together nicely (it will be very tender).
4. Cook on high for 4-5 hours or low for 6-8 hours.
5. Mix the 1 tablespoon cornstarch with 2 tablespoons water and add to crock pot. If on low, switch to high and let cook 15 minutes or until sauce is desired thickness.
I serve this with brown rice and broccoli. Delicious!
