Delicious Butternut Squash Soup

Ingredients
Butter, unsalted, 1 tbspOnions, raw, 1 smallPotato, raw, 1 medium (2-1/4" to 3-1/4" dia.)Carrots, raw, 1 mediumButternut Squash, 3 cup, cubesApples, fresh, .5 medium (2-3/4" dia)2.5 cups waterBullion - Chicken - Reduced Sodium - 2-3 cubesSalt, .5 tspPoultry seasoning, 1 tspDash of Chili pepper3 oz Fat free cream cheese (about 3 tbsp)
Directions
Melt butter in a large soup pot. Add in chopped onion. After onions have turned soft, add in chopped fruits and vegetables and cook until tender, stirring occasionally. Add water and bullion cubes and bring to a boil. Reduce heat, add spices, and simmer for about 30 minutes.
Turn off heat and spoon soup into a blender, pureeing about 1/4 of the soup at a time to avoid splattering. Add cream cheese into the blender last and mix until all is blended in well.

    I don't like white potatoes so I used sweet. Also I used no sodium bullion to cut down the sodium. This was so good. I only made half to make sure I liked I liked it. I should of made the full recipe. 😊 - 11/17/13

    Really enjoyed this soup. I didn't have poultry seasoning, but I did have fresh thyme and rosemary and that was perfect. I also sweetened it up slightly with a teaspoon of spoon for spoon stevia. Didn't have chilli pepper so I threw in a few dashes of siracha.

    Wonderful! Easy and so flavorful. I love that there are carrots and apples. I used a sweet potato and added cumin. Could use broth instead of the bouillon if you don't have and sub in almond milk for some of the cream cheese if necessary ( or add for extra creamy!) - 12/18/17

    I threw all the ingredients except for the cream cheese in the crock pot on high while we were at church. Came home and it was perfect to blend, add the cream cheese, and serve to my hungry crew!
