Hamburger Noodle Casserole

6 oz no-yolk noodles1 medium onion, diced1 small green pepper, diced1 lb extra lean ground beef14 1/2 oz canned diced tomatoes1 1/2 tsp dried parsley1/4 tsp black pepper1 1/2 cups Kraft free shredded cheddar cheese18 Ritz reduced fat crackers
Cook noodles according to directions, omitting the salt if desired.
Meanwhile, preheat the oven to 350ºF. Spray 9x13 inch baking dish with nonstick spray.
Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the onion, green pepper and ground beef, cook, stirring occasionally, until beef is cooked.
Combine beef mixture, noodles, tomatoes, parsley and pepper in the baking dish. Stir in 3/4 cup pf the cheese. Sprinkle the top with remaining 3/4 cheese and crushed crackers. Spray the topping with nonstick spray. Bake until hot and the cheese is melted, about 35 minutes.
