My favorite Quick Turkey Chili

Onion, 1 LargeCorn Oil - 2 T1 1/4 lbs ground lean turkey breast1 15 oz can pinto beans1 15 oz can black beans1 15 oz can diced tomatoes1 6 oz can tomato paste1 C frozen corn kernels1 15 oz can chicken broth2 t chili powder2 t garlic powder or minced fresh garlic (I used 4-5 cloves but I love garlic!)1/2 t ground black pepper1/2 t ground cumin
Makes 6-8 one cup servings
Peel & chop onion. Pour oil in dutch oven or large saucepan. Thurn heat to medium. Ad onion - cook, stirring frequently until onion is almost clear. Add ground turkey. Stir with a wooden spoon, breaking up the large pieces. Brown turkey - about 5 min. Stir in spices. Drain and rinse beans. Add to pot with tomatoes, tomato paste, corn and chicken broth. Cook until heated - 5 - 10 minutes longer.
