Are you feeding an army? 18 pancakes is a lot.
And do you really only eat ONE? Because 2/3 cup of flour is NOT low carb and won't help if having problem with sugars (hypoglycemia)
Probably a good recipe but shouldn't be under low carb - 3/18/13

8 eggs! Yikes! Possible to use egg whites? Or maybe LouLou can share how hers turned out with only 4 eggs? (still seems a lot!) - 6/10/11

As a ricotta lover, I find that this recipe is a great idea. Therefore, I will use only 4 eggs... I am looking forward to trying this recipe ! Thank you very much ! - 3/28/10

A little spongy, but very good- if you don't tell anyone there's ricotta in them, they won't know. - 4/19/08
