African Safari Pilaff

Ingredients
1 lb. ground beef1 large onion, chopped2 cloves minced garlic1 1/2 tsp curry powder1/4 tsp ground ginger1 Tbsp. honey1 cup minute rice3 cups water1/2 tsp salt2 beef boullion cubes3 Tbsp. smooth peanut butter1/3 cup rasins1/3 cup dry roasted peanuts (optional)1/3 cup flake coconut (optional)
Directions
Cook hamburger, onions & garlic in a large skillet, drain off any fat. Add the rice & saute for 2-3 minutes. Add the water, boullion cubes, salt, ginger, peanut butter, honey, rasins & curry powder, Bring to a boil, reduce heat to low, cover. Simmer the mixture for about 20 minutes, or until the rice is tender. If it seems dry, add a little water towards the end.

Serve in bowls with a few peanuts & coconut sprinkled on top.

    ground beef is sometimes referred to as "hamburger". yes, you missed the first listed ingredient. I'll bet it's even better without the animal prduct. - 9/13/11
