2 medium baking potatoes, peeled and sliced thin1/4 onion sliced thin1 tbsp Country Crock (Margarine spread)1 tbsp lemon juiceSpices any, all or your choice: Basil, Parsley, Italian Seasoning, Pepper...
Peel potatoes and slice (like scallops). You will be making layers of potatoes, Country Crock, onions, seasonings, and repeat 2 or 3 times in a baking dish. Drizzle 1 tablespoon of lemon juice over all and cover with tinfoil or lid. Bake at 350 degrees for 30 to 45 minutes.
Can do individual packets on the grill; Place layers on tinfoil and wrap securely, so when turned juices do not run out. Cook time on the grill will be less if done in individual packets
You can be very creative and add what ever spices you like.
