Ingredients
4 Lg. Whole Eggs4 Lg. Egg Whites3/4 c. Ortega Garden Vegetable Salsa, Medium1/4 c. Non-Dairy Creamer2 oz. Monterey Jack Cheese, shreddedSalt & Pepper
Directions
Preheat oven to 375 degrees.
Scramble eggs in a bowl. Add in salsa, creamer, shredded cheese. Spray pie dish with cooking spray and pour egg mixture into dish. Bake at 375 for 45 minutes or until center is firm.

I cut this into 6 pie-sized slices, but wound up serving 2 slices each for it to really be enough.
