Chinese Chicken & Broccoli

Ingredients
pam olive oil cooking spray1 medium onion, sliced2 cloves garlic, chopped fine1 inch ginger, grated1 chicken breast, cubed2 chicken thighs, cubed1 c chicken broth1/4 c soy sauce1 TBS corn starch4 stalks broccoli, cut up3c cooked brown rice (1c dry)
Directions
Spray hot wok with pam until coated well. Add onions, garlic, and ginger and stir-fry until tender over medium hot heat. Add cubed chicken and let sit to brown. After a few minutes, stir and brown the other side. When the chicken is browned all over, add broth and soy sauce. Combine corn starch with 1/4c cold water, whisking until smooth. Push solid ingredients to the sides of the pan and whisk the corn starch into the hot liquid. Add broccoli and stir for 2-3 min until just cooked. Serve over 3/4c cooked brown rice. Makes 4 servings.
