Mixed bean soup with Italian sausage

1 pound of dry mixed beans and lentils1 pound Italian sausage (Turkey sausage ok)1 lg onion1 red bell pepper1 green bell pepper4 cloves of garlic1 12 oz can diced tomatoes1 6oz can tomato sauce1 tsp cayenne 2 bay leaves1/4 tsp black pepper2 Tbsp olive oil6 cups chicken stock (homemade is way better)2 cups water
Soak beans overnight.
Saute garlic and vegetables in olive oil, then add all other ingredients into large pot and cook for 2-3 hours or until beans are soft. Adjust spices to taste.
