Greatest Pumpkin Pie

Ingredients
1 3/4 cups cooked fresh pumpkin1/2 tsp. salt1 3/4 cups milk3 eggs2/3 cup brown sugar (packed)2 tsp cinnamon1/4 tsp. ground cloves1/2 tsp. ginger1/2 tsp. nutmeg
Directions
Preparation of fresh pumpkin: I use 1 pie pumpkin. Scoop out inside. Cut pumpkin into large chunks. Peel off outer skin and dice. Place in unseasoned water and cook until very tender. Drain and mash. I used a potato masher but next time I am going to puree it in my food processor.

While the pumpkin is boiling, blend remaining ingredients. Add mashed or pureed pumpkin. Pour into an 8" X 8" oven-proof dish. Bake at 425 degrees for 45 to 50 minutes until inserted knife comes out clean. Both filling and cooked pumpkin freeze. Serve with Cool Whip. Makes 6- 5" squares. It can also be poured into a pie crust.
