Elsa Brenner's Cole Slaw

Ingredients
Cabbage, red, fresh, 4 cup, chopped Scallions,1 bunch tops - choppedParsley, 1/2 cup - choppedCanola Oil, 2 TbsWhite Vinegar, 2 Tbs (I like to use unseasoned rice vinegar OR champagne vinegar)Salt, 1/8 tsp (at most)Honey, 1/2 tsp (I like to use a lime-honey!)
Directions
1. Chop onions, parsley and cabbage.
2. Combine vinegar, oil, salt & honey and stir with a whisk until well combined.
3. Pour dressing over salad and let sit 10-15 minutes to set flavors

Makes approx 4 1-cup servings.
