Coconut Millet Pudding

Ingredients
3/4 c Millet3 c Milk / or milk substitute1 c Coconut flakes or shredded your choice1/4 c organic sweetner- molasses or agave or maple syrup1 tsp sea salt1 tsp vanilla extractpam spray / I can't believe it's not butter spray
Directions
Pre-heat oven to 350 F
Get out an oven ready casserole dish and spray it with pam
In a large saucepan scald your milk.
Add all other ingredients after milk has scalded and stir until thouroughly mixed.
Pour mixture into casserole dish and place in oven.
Cook for 1-1-5 hours until the millet is soft.
If the pudding appears to dry add milk as needed.
Serve it hot or chilled with fruit preserves and non-fat cool whip as per taste. I like it plain myself :)
