Chili Pepper Chicken

Ingredients
1 tbsp Cooking Oil (vegetable omega 3)1 6oz. Chicken Breast (boneless skinless fat trimmed) diced or cut in strips4 tbsp Red Onion, chopped2 cloves Garlic4 tsp Ginger root, chopped1/4 cup Green Onion (Scallion) chopped3 medium Red Chili peppers (Annaheim) sliced in rounds2 tbsp basil (whole leaf) trim stalks1/4 cup Peanuts
Directions
Heat oil in skillet. Add red onions saute and cover. Cook onions on low heat until soft. Add chicken saute cooking on medium-high heat until browned, about 5-7 minutes. Reduce heat to low. Add garlic and saute. Add ginger and saute cover and cook for a 1-2 minutes. Add green onions, red chili peppers and basil. Saute until all mixed well together. Cover and cook for 1-2 mins. Add peanuts and stir. Serve with brown or white rice. Add soy sauce to taste and chili pepper sauce if desired. Serves 2.

    My husband is very verbose about his food likes and dislikes and he says this is a "keeper" recipe!. I added a red bell pepper and low sodium soy sauce. Did not add the peanuts because he doesn't like them. - 1/27/09

    yummy - My husband and adult son loved it. My son normally doesn't like chicken but enjoyed this spicy hot dish. I will be making it again, I may add a bell pepper next time too. - 11/10/08
