vegan sweet potato cookies

Ingredients
Sweet potatoes and walnuts make for scrumptious cookies!
Directions
Cream vegan butter, and gradually add sugar, followed by applesauce, sweet potato, baking powder, cinnamon, salt. Stir in the nuts. Cooling the dough in the freezer will make it easier to handle. Drop by rounded tablespoon onto baking sheet lined with parchment paper. Bake at 375 for 12 minutes. YUM!
