Tilapia Corn Chowder

3 cups freshly cut corn1 cup heavy cream1/2 cup chopped celery1/2 cup chopped red peppers1/2 cup chopped vidalia onions2 tbsp minced garlic2 lbs tilapia2 cups roasted sweet potatoes2 tbsp fresh or dried thyme2 tbsp fresh or dried basil1 cup mushroom or chicken broth20 sweet baby carrots cut in halves1 tbsp seasoned saltsalt & pepper to taste
In crock pot combine corn, heavy cream, mushroom broth, celery, peppers, onions, garlic, tilapia, thyme, basil and carrots.
Set crock pot on high for 1 hour, then reduce temperature to low for one hour (actual time may vary depending on crock pot).
After 30 minutes of cooking chowder on low, set oven to broil & roast sweet potatoes, approximately 10-15 minutes cooking time may vary depending on oven.
Once potatoes a cooked place into chowder, turn crock pot off. Allow time to cool before serving.
Makes approximately 8 one cup servings
