Veg & Egg Breakfast Buritto

Ingredients

3 egg whites1/8 tsp vanilla extractdash of salt & pepper1/4 cup diced zucchini1/4 cup diced onions1/4 cup diced mushrooms1/4 cup diced tomatoes1 oz soft goats cheese1 tbsp salsa (of your choice)1 whole wheat tortilla wrap
~I use non stick Kitchen Aid pans so I do not need to add oil, if you want you could use some PAM to spray the pan (try and stay away from oil, even olive oil has 10gr of fat per tbsp)
~add zucchini, onions, mushrooms, tomatoes to the pan and begin to saute
~in a small bowl whip your egg white and vanilla untill slightly frothy and add a dash of salt & pepper
~when the veggies in the pan are halfway cooked add egg whites and cook untill eggs and veg are cooked to your liking (I like mine cooked well with a bit of golden brown on the veg)
~lay your tortilla flat and smear with 1 tbsp of the salsa of your choosing
~crumble 1 ounce of soft goats chees over salsa
~add all veg & egg to the tortilla and wrap the tortilla into a log shape and try to tuck in both ends.
~Cut in half & Enjoy
This is absolutely delicious and I eat this for breakfast at least once per week, add in a fruit/protein smoothie and you are all set!
