Roasted root vegetables

Ingredients
2 C. Carrots, cut into sticks2 C. Sweet Potatoes, cut into 1" cubes2 medium yellow onions, chunked2 T. olive oil1/2 t. Garlic Salt1 T. Italian Seasoning
Directions
Toss all ingredients together in a large bowl, making sure veggies are evenly coated. Roast in single layer on a baking sheet in a 400 degree oven. Cook for 40 minutes, turning veggies halfway through cooking time. Serves 8. Each serving is roughly 1/2 C.
