Pumpkin Chocolate Chip Cookies

4 cups flour2 cups oats2 tsp soda2 tsp cinnamon1 tsp salt1.5 cups butter, softened2 cups brown sugar1 cup sugar1 egg1 tsp vanilla16 oz. pumpkin1.25 cups chocolate chipsFrosting:1/3 cup butter, softened4.5 cups powdered sugar1/4 cup milk1 tsp vanillafood coloring
Combine dry ingredients in a large mixing bowl. In a separate bowl, cream butter, add sugar, egg, and vanilla. Alternate mixing butter mixture and pumpkin into dry ingredients. Add chocolate chips. Shape into rough pumpkin shapes with stem. Bake at 350 for 20-25 minutes.
Frosting:
Cream butter. Mix in 1 cup powdered sugar, then milk and vanilla. Gradually add the rest of the powdered sugar; add milk if necessary to desired texture. Remove a small amount; add food coloring to make the larger amount orange and the small amount green.
Makes approximately 3 dozen large cookies; more if you make them smaller.
