Honey Bourbon Balls

2.5 cups finely crushed low-fat vanilla wafers (can use regular ones but they'll have more calories)1.5 cups confectioners' sugar2 Tablespoons unsweetened cocoa powder1 cup finely chopped pecans3 Tablespoons honey.25 cup GOOD bourbon
Combine low-fat vanilla wafer crumbs, chopped pecans, cocoa powder and 1 cup of the confectioners' sugar. In a measuring cup, blend the Bourbon and honey; stir into the dry mixture. When thoroughly blended, cover and refrigerate for an hour or more. Sift about 1/2 cup of confectioners' sugar onto a large piece of waxed paper. Form into 1-inch balls (or smaller) then roll in powdered sugar (cocoa powder can also be used). Store tightly covered in the refrigerator for a day or two to "ripen". These can be frozen. Makes about 3.5 dozen 1-inch balls.
