Roasted Salmon with Apple-Almond Pesto

Ingredients
16 ounces salmon fillets1 teaspoon unsalted butter2 Granny Smith Apples, diced1/4 cup slivered almonds, toasted1/2 bunch flat-leaf parsley, leaves onlyPinch black pepper1/2 lemon, juiced
Directions
Preheat the oven to 400 degrees. Place the parsley leaves in a blender; puree, adding lemon juice and warm water until the mixture forms a paste. Season with black pepper. Heat a small sauce pan over medium and add the butter.
Once the butter has melted and is foaming, add apples and cook for 3 minutes. Remove the apples from the heat and add the almonds and parsley; toss to combine. Place the salmon, skin side down ihn a baking dish. Layer the pesto over the fish; roast for 12-15 minutes or until the meat is firm and just starting to flake.
Makes 4 three ounce servings with 1/4 cup of apples and pesto per serving.

    This was really delicious and easy as can be! The only thing I would add is maybe some caramelized onion... but that's just personal preference. The recipes is healthy and fresh and tastes great. - 1/27/10

    Caramelized onions: Two medium onions: slice very thin, break apart into saute pan with 1 tbl melted butter and 1 tbl olive oil. Cook over to medium heat, stirring frequently until golden brown and very limp. Takes about 1/2 hour. Can be used on sandwiches, pizza, in French onion soup, etc. - 2/24/10

    The idea is good but the topping needed more fat - butter, olive oil, or butter with olive oil, to make it cook down into a cohesive combination. One tablespoon of any of these makes a big difference. - 8/14/11

    Absolutely delicious - tho I confess, I never met a salmon fillet I didn't like. I agree with previous posters - next time I will also add a bit of sweet onion to the apple mix. - 8/10/11

    Not a big fan of the 'fishy' taste and thought this would be a good coverup. My family literally tossed this entire dish in the trash. The pesto was disgusting and the salmon did not cook well. I followed the recipe to a tee & know how to cook. Yuck! - 9/24/11

    I had some trouble with this recipe. There was so much apple/parsley pesto that it covered the fish too much. The salmon didn't cook in time, so by the time it did cook the almonds were pretty burned. But other than that, it tasted really good. - 3/4/10

    Very good. I didn't change anything but downsized the recipe to cook for one. Will definitely keep in my tracker. Served with red potatoes, roasted with onions and rosemary. Oh, I did change the oven temperature to 375. The salmon was soooo moist. - 3/30/13

    This sounds delicious -- I would never think to combine apples with fish, but I have a really gorgeous 1lb. orange trout fillet that is begging me to try this. :)
    I'll stick to using my food processor for the pesto, though. My blender would be useless for such a small amount. - 9/24/11

    Haven't tried the receipe, and will omit butter when do. Salmon is oily enough. Plus, omitting the butter will reduce the bad fats. Lookin forward to experimenting w/oils.

    How can this be called "Pesto" when there are not any pesto ingredients in the recipe? Garlic, basil and pine nuts are in traditional pesto. It would be easier to just cook/grill the salmon to the individual liking - and top with real pesto, which can be purchased organic or non-organic. - 3/14/13
