Unchained Recipe Contest Subway Philly Cheese

1/2 Whole Wheat Pita (6-1/2" dia) 1 Portabella Mushrooms, stem removed and thinly sliced1 slice Provolone Cheese2 tbs chopped onions1/4 red pepper, thinly sliced1 tsp olive oilMARINADESoy Sauce, 1 tsp Red Wine Vinegar, 1 tspVegetarian Worcestershire Sauce,1 tsp
Thinly slice portabella and vegetables.
Mix mushroom slices and marinade. Allow to sit for 2 minutes, then drain marinade. Don't go for too much longer or the mushrooms will be overpowered by the seasonings.
In skillet, saute onions and peppers until soft and slightly browned. Remove from skillet, placing off to the side.
Saute mushrooms in skillet until soft and brown.
In pita half, layer cheese, vegetables and mushrooms.
Place under broiler for 2-3 minutes until pita gets slightly crispy and the cheese melts.
Serve and enjoy!!

Delicious! Just made this tonight for dinner.
I used Bragg's Amino Acid instead of soy to cut down some of the sodium. Also, added in a little bit of crushed red pepper when I was sauteeing the onions and peppers for a little extra zing.
I'm going to try a "meatball" sub with portabella next - 1/3/10
