Ground Beef and Veggie Casserole

Ingredients
1-1.5 lbs. lean ground beef (substitute ground turkey for lower fat)1 cup diced onions4.5 cups frozen diced potatoes (southern style hash browns)1 cup fresh or frozen green beans1.5 cups zucchini, quartered and diced1 can cream of celery soup1/2 cup evaporated milksalt and pepper to taste1.5 cups shredded cheddar/jack cheese; dvided
Directions
Brown ground beef and onions; drain. Spread frozen potatoes in bottom of 9x13 baking dish and sprinkle 1/2 cup of cheese. Layer with ground beef; add any seasonings you wish and then sprinkle 1/2 cup more of the cheese. Mix green beans, zucchini, soup and milk; pour over beef and spread out. Sprinkle with remaining 1/2 cup of cheese. Bake at 350 for 30 minutes. If you don't care for crispy vegetables, cook for an additional 15 minutes. Makes 10 1-cup servings.

    It was a little bland. Next time I would add more seasonings to it. I had added some to the meat when I was browning that. - 2/2/11

    This was nice to pack up for lunch at work the next day. I would advise cutting up the green beans into smaller pieces so their cook time coincides with everything else better. I think next time I'll try it with turkey. Decent recipe. - 6/30/08
