Souper Easy Curried Squash

Ingredients
1 onion, chopped3 cloves of garlic, chopped1.5 cups of butternut squash, half-inch cubes2 cups of vegetable broth or 2 cups of water with a bullion cube
Directions
Start by sauteing the onions and garlic in a small amount of water until the onions are translucent.

Add the squash cubes an the broth. Bring the mixture to a boil, then reduce to a simmer. The soup is done when the squash is soft and a deeper orange.

When the squash has reached the proper consistency, puree the soup in small batches in food processor or blender.

Add the curry powder to taste.

Makes about 4 servings.
