Crispy (and Lean!) Mexican Pizza

Ingredients
1.25 lb. lean ground turkey breast1 onion, chopped3 TB taco seasoning, reduced salt2 cans diced tomatoes1/4 c. water8 corn tortillasgarnish-- small pitted olives, pickled jalapenos
Directions
Preheat oven to 425.

In skillet sprayed w/ cooking spray, add turkey, onion and seasoning mix. When browned, add tomatoes and water-- simmer uncovered until most of the liquid evaporates.

Arrange tortillas on cookie sheet sprayed w/ cooking spray. Spoon turkey mix onto tortillas. Top w/ olives and jalapenos-- add cheese if desired.

Bake about 15 min-- filling will be hot-- any cheese will be melted-- and tortillas will be crisp.
