Traditional Miso Soup

Ingredients
12 cups filtered water1/2 medium yellow onion, cut into half moons2 carrots, peeled and chopped1/3 cup yellow or white miso14 oz. (one package) firm tofu, cut into cubes
Directions
Add water to stock pot and bring to a boil. Once water is boiling, add tofu, onions, and carrots to pot and turn heat to medium-high. Cover and let cook for 15 minutes.

Turn heat to low and add miso. Simmer uncovered for 5 minutes.

    Pretty good! A bit bland for my taste though -- I added in a little sea salt and some balsamic vinegar -- I also threw in some mushrooms I needed to use up. Yes, I will probably make this again. It makes a good meal when you want something hot and light. - 3/19/10
