Tomatoey Broccoli, Mushroom and Zucchini Stew

1 tblsp. Olive Oil1 Onion1 Tomato4 Cloves of Garlic1 Medium Zucchini2 cups of Fresh Mushroom slices1 bunch of Broccoli2 Tblsps. Tomato Paste1.5 cups of Tomato pasta sauce1 Tsp. salt1 Tsp. black pepper1 Tsp. thyme1 cup water
Dice your onions, tomato and zucchini, chop up broccoli.
Saute your onions in olive oil, add the chopped tomatoes and mushrooms, and half the garlic, after 2 mins. add tomato paste and your spices, cook for about 2 mins. then add the remainder of the veggies and then add your tomato sauce, remainder of the garlic and water, stir, cover and bring to the boil and simmer, stir once in a while. Less time if you like the Broccoli with a little bite.
