Gingerbread Muffins

Ingredients
1 1/4 cups whole wheat flour1/4 tsp salt3/4 tsp. baking soda1/2 tsp. ground cinnamon1/2 tsp. ground ginger1/8 tsp. ground nutmeg1 tbsp. sugar1 large egg2 tbsp. Sunsweet Lighter Bake Oil Replacement1/3 cup molasses1/2 cup skim milk, with 1/2 tbsp. lemon juice mixed into it (or 1/2 cup buttermilk)
Directions
Combine dry ingredients. Mix wet ingredients in blender. Add to dry ingredients and mix just until combined. Fill prepared muffin tins. Bake at 400 12- 14 minutes for large muffins, or 8-10 minutes for mini muffins. Makes 12 large muffins, or 24 mini muffins. Nutritional information is for large muffins.
